Easy Chicken Fajitas

This my Mother's famous chicken fajita recipe. We love this because it is so quick and easy, giving us more time to make our margs!


We use 1 large chicken breast which creates a 1-2 person meal. Double the recipe for a larger portion! We usually pair our fajitas with our homemade guac recipe (click link) or a side like rice, beans, or corn.


Ingredients

  1. 1 Large Chicken Breast

  2. Half a Large Onion

  3. 1 Bell Pepper

  4. Garlic Powder

  5. Onion Powder

  6. Cumin

  7. Chile Powder

  8. Paprika

  9. Salt

  10. Cilantro

  11. Lime Juice

Let's get cookin'

  1. Slice breast into 1-inch cubes

  2. Season cubed breasts in a bowl with 2 teaspoons each of Salt, Garlic powder, Onion powder, Cumin, Paprika, and Chile powder (less if not a fan of spicy)

  3. Saute the chicken in a large pan on medium until an internal temperature of 155 degrees Farinheight. Once the temperature is reached remove from the pan (this will be added back later)

  4. Chop Onion and peppers into fajita-style slices and add to the pan the chicken was in. Season the veggies with the same mixture; using 1 teaspoon of each this time

  5. Add the chicken back into the pan with the veggies

  6. Add Cilantro and Lime Juice to taste

  7. Serve on corn tortillas with a garnish of fresh chopped onion and a lime wedge!
